Cacao, Maca + vanilla raw cheesecake

Ingredients:
BASE
- 1 bar of lucocoa chocolate – 70% Dominican Republic or Natural Blonde (White chocolate)
- 3 cups of pollen + grace chocolate granola
TOPPING
- 4 cups cashews, soaked overnight
- 4 tbsp vanilla essence
- 8 tbsp maple syrup
- 1 lemon, juice + zest
- 1 tbsp maca powder
- pinch of salt
GANACHE
- 2 bars of Lucocoa chocolate
- 3 tbsp coconut milk
- 1/4 cup almond milk
- 1 tsp maple, to taste
Method:
BASE
1. Melt the chocolate, then mix with the chocolate granola (any granola will work - or a mix of blended nuts and cacao powder)
2. Add to 1 large or several smaller lined tins before the chocolate sets
3. Place in the fridge
TOPPING
1. Add the soaked cashews to a blender and mix
2. Add all the other ingredients and mix until fully combined
3. Add to the base and place in the fridge to set
GANACHE
1. Melt the chocolate and add the coconut milk + almond milk until slightly runny (add more than 1/4 cup if necessary)
2. Add the maple if you prefer a sweeter dessert
3. Mix and pour over the cheesecakes, then decorate with nuts/dried fruit/whatever your heart desires.
